Lassi is a popular drink made from yoghurt, milk and cream and buttermilk. There seems to about as many lassi recipes as there are Indian people! Some people base their Lassi's around yoghurt and milk, others use buttermilk as the base ingredient. Lassi's can either be sweet or salty, depending if you add sugar or salt to the mix. If you are making a sugary Lassi, then fruit juices, mint or rosewater are commonly used.

The milk and yoghurt used in lassi's make this drink a perfect accompaniment to the spicy Indian food. If you aren't a huge fan of spicy food, grab a lassi to take the bite out of the chillis. The drink is known to settle a raging stomach but the ones made on the street will probably have the opposite effect because they contain local water, and therefore should be avoided.

A favourite variation of the sweet Lassi is the Mango Lassi.

Recipe for Mango Lassi

Ingredients

- 3 cups curd (thick)
- 5 ice cubes
- 1 cup mango pulk
- 4 tsp sugar or powdered sugar
- water

Method

Crush the ice cubes in a blender or with a mallet. Add the curd, water, sugar and mango pulp. Blend for a minute or so. Drink immediately, or refrigerate.



Mo Mo

MoMo is a Tibetan speciality, and the nations most popular dish. Whilst there are a million of different recipes for MoMo, they are generally described as stuffed and steamed dumplings. MoMo made in Tibet is often filled with yak meat, but beef, chicken, tofu or vegetables might be more suitable fillings if you want to try this at home. MoMo making is also great for your social life, because Tibetan women usually make huge batches of MoMo in groups of 3-5. Because it is a rather labour intensive dish, group MoMo making is a great way to make these complicated, yet delicious dumplings.
