I'd really like to got to Cuba. When I first came to Vietnam 14 years ago you saw how sweet and wonderful people were - then economic development hit them. Yes definitely Cuba before things start to change. |

I would like to write another book. I found writing this 1st one very therapeutic and I liked the process. I think it's a way of reflecting your life like an old person does about how things used to be. It's holding onto memories - it was an exciting time. It's only looking back that we can appreciate things sometimes. I'd like to do a book on something I enjoy doing. There's so many things I'd like to say.

You totally rock! There were 13 shows. There's a lot of talk of us doing another 8 tours of WCA - not exactly like the Rolling Stones buy hey - I'd love to! If we do, and when we do you'll be the first to know about it!

Oh... I forgot... As for making a show where you just cook... Well people in TV say that's been done already - there's Keith Floyd, Julia Childs, Jamie Oliver, etc. I think it would be kinda fund tho - I'd love to do it! And I think each presenter is different so why not.  |

It's not limited to chickens - a lot of birds can be hypnotized if you run your finger down from their throat to their chest
plate - they go to sleep. A bit like caressing the nose of a shark... I learnt that in Bali. Then... I practiced.  |

I didn't eat the poison - I actually ate the bile gland of the snake as an aphrodisiac. I felt just as horny as I usually am.
But... that's another story altogether. I'd also recommend Veuve Clicquot and *.  |

I don't dream of things that are ridiculously unrealistic. Example: Everyone told me I couldn't open a restaurant in 33 days but I did. I could have been hit by a bus when it was done and still be totally satisfied with my life. I don't usually like sharing my dreams too much tho... |

OK SweetyGirl so you're not Bobby Chinn? I'm a HUGE Van Morrison fan I could listen to for the rest of my life. I like certain rock & roll songs that totally pick me up - the Doobie Brothers, Beatles, Grateful Dead, guitar blues... Albert Collins, Muddy Waters... Mozart. The older you get there's so much more to like. Bob Dylan too and... cover versions of Bob's music (without the nostrils), Eric Clapton for example. |

1. I don't change my look very much. I've got very curly hair and it takes for ever to dry out here in the tropics. What a drag. And, I don't like to use a hairdryer. So, one day I just decided to cut it off.

Let's see... That's hard. Well... At the end of the WCA Bali shoot we were preparing smoked duck - but the only thing is... you have to order the duck 24 hours ahead of time! Well, when we got to the final shoot someone (no names) forgot to do this and the duck seller refused to sell us his last duck cos someone else had already reserved it. So the last shot of the show (couple of frames only) you see us eating... chicken and looking like we're eating duck. |

1. What are some of the biggest challenges you faced in opening and developing a successful restaurant in Vietnam?
Coming up with a lot of money is a huge challenge. Managing people, project management, menu development with inconsistent ingredients, sometimes available and sometimes not. Buddhism has taught me to remain cool, calm and collected. To bad I'm a muslim....
2. What's you favorite city for food in Vietnam, and where in town--and what dish/specialty do you like the best?
(a) If there was no such thing as shameless self-promotion - I'd guide you to my restuaurant www.BobbChinn.com in Hanoi
Last time I was in Phan Thiet was in 1996 - I can't remember what I ate then. But rarely have I ever had a bad Vietnamese meal on the street.
(b) What cuisine do I like? There's 2 distinct different kinds of cuisine between North and South, between Hanoi and Ho Chi Minh city. I live in Hanoi and there's some dishes that Hanoi-ians execute at a much more sophisticated level. For example banh cuon and Pho. Generally speaking I love Banh Xeo and a lot of different street food in Saigon. One of my favourite restaurants in Saigon is Huong Yen.
3. Vietnamese tend to be very conscious of ethnicity and nationality. Have you experienced in Vietnam any difficult, frustrating, or even comical situations regarding perception of your ethnic background or nationality?
Yes. I generally don't speak Vietnamese when having learned there are 6 tones and 1 syllable. Having learnt that I speak jibber and I amuse myself because no one can underdstand. Then I tell them I'm from another area so I speak a different dialect.
4. I hope to check out your restaurant up North in the near future, or even introduce you to some of the great eateries and local dished down here, should you come visit.

Both... gourmet food - white truffle oil, saffron and caviar. As well as curry spices I picked up in India by the spice master.
Junk food? Instant noodles (Top Ramen), digestive biscuits from the UK, I buy loads when I see them cos in Hanoi they run out all the time. |
