BAKSO (4 servings)

Ingredients for meatballs:

• Minced beef 250g
• Ingredients A
• 2 cloves garlic
• 5 pieces onion
• 1 tsp pepper
• Ingredients B
• 1 tsp corn flour
• 1 tsp rock salt
• 1 tsp msg

Method:

1. Fry ingredients A together with a bit of water until the mixture is dry

2. Mix ingredients A and B together with the minced beef well.

3. Wet hand with warm water

4. Hold a chunk of the minced beef in hand and create balls by squeezing the minced beef in hand and remove each ball with a spoon and put the ball in a bowl of water.

Ingredients for soup stock:

• 1 piece beef bone marrow
• 1 piece (approximately 2 cm long) ginger
• 1 piece (approximately 1 cm long) galangal
• 1 tbsp salt
• 2 tsp msg
• 2 cloves garlic
• 5 pieces onion
• 1 tsp pepper
• 1 stalk (cut into 2 cm pieces) leek

Other ingredients:

• rice noodles
• deep fried shallots
• celery leaves

Method:

1. Fry garlic, onion and pepper together with a bit of water until it’s dry.

2. Put beef bone marrow in water.

3. Add ginger, galangal, the fried garlic/onion/pepper mixture, salt, MSG and leek.

4. Cook till the soup comes to boil, remove excess fat off the top.

5. Add meatballs to the boiling soup.

6. Cook for another 10 minutes.

7. Add rice noodles (bee hoon) to the soup and cook for another 2 minutes.

8. Put cooked rice noodles and meatball soup into bowl, garnish with deep fried shallots and chopped celery leaves.
