Planet Food Scandinavia Recipe: Mustard Herring

Ingredients

• 8 oz herring
• 1/3 cup swedish mustard
• 1/3 cup créme fraîche
• 2 tbsps superfine granulated sugar
• 1 tbsp packed light brown sugar
• 1 tbsp water
• 2 tbsps chopped fresh dill
• 2 teaspoons drained and rinsed green peppercorns, chopped fine
• garnish: 8 fresh dill sprigs

Method

1. Rinse and drain the herring, then pat dry between paper towels.

2. Cut the herring into 1/2-inch pieces.

3. Whisk together mustard, créme fraîche, sugar, water, onion, dill, and peppercorns and stir into the herring.

4. Chill, covered for 2 hours to allow the flavours to develop.
