To impart the spicy flavour of this dish, Bobby Chinn uses a Mexican chilli – the chipotle – a smoked-dried jalapeño which is very spicy. By using the tropical fruits found in this region, combined with sugar and water, resulting in a syrup – and adding chipotle to the mixture, Bobby has created an interesting dessert which is both sweet and spicy at the same moment with a smoked touch to it.
• 2 chipotles
• 1 cup sugar
• 1½ cup water
• 3 mangosteens
• 2 bananas
• 3 dragon fruits
• 3 oranges
• 1 rock melon
1. Heat up the water and add sugar, stir the mixture until the sugar is dissolved in the water.
2 . Add all the chopped fruits in the mixture.
3 . Throw in the chipotles and let the mixture simmers for 15mins before serving.
