Ingredients (tapioca flour mixture):

• 110gm Sweet potato flour
• 250ml Water
• 1 teaspoon Salt

Ingredients beef broth:

• 2 Tomatoes
• 2 Onions
• Few slices of ginger
• 1 Carrot
• 500gm Beef bones


1. Put all ingredients into a pot, bring to a boil.

2. Let it simmer till the broth turns milky

3. Set aside.

Other ingredients:

• 1 Tomato cut into wedges
• 4-5 Cloves of garlic
• 1 Carrot cut into cubes
• 2 Slices of ginger
• Spring onion for garnishing
• 500gm of beef shank
• 1 Star anise
• 1 Teaspoon of Si Chuan pepper
• Few stalks of Xiao Bai Cai


1. Boil the beef shank until it turns tender – then cut into cubes.

2. In a frying pan with fry the garlic in oil with si chuan peppers and ginger until fragrant.

3. Add the beef shank cubes, tomatoes wedges, carrot cubes, and fry.

4. Add the bean paste to taste.

5. Add in beef broth and simmer for 1 hour.

6. Pour over cooked Chinese yellow noodles and garnish with bai cai.
