This is a very quick and simple recipe:
- 12 poppadoms (a variety of plain and spicy is good)
- Large bunch of fresh coriander
- 4 plum tomatoes
- Half a red onion
- 1 red chilli
- 2 limes
- Large pinch of salt
Seed the tomatoes and chop into small pieces.
Chop the fresh coriander and red onion.
Finely chop the red chillies (green chillie can be used for a spicy flavour).
Mix all together in a bowl. Squeeze the limejuice over the mixture (omitting the pips) and add the salt.
Serve in a bowl with poppadoms on the side. Or if the poppadoms have been fried then the condiment can be sprinkled over each poppadom.
Serves 4 as a snack or starter
