ZHAJIANG MIAN (Noodles with Pork)

Ingredients:

• Fresh noodles – portion for 4
• Pork fat – 1 bowl
• Sliced Ginger – 2 tablespoons
• Leek – 6 stalks
• Lean pork meat – 1 bowl
• Soya bean paste – 1 and half bowl
• Chinese wine – to taste
• Salt – to taste
• MSG – to taste
• Oil – 3 tablespoons

Method:

1. Pour oil into wok.

2. Stir-fry pork fat iin the wok.

3. Sauté ginger and leek with the pork fat.

4. Add lean pork meat.

5. Add Chinese wine and soya bean paste.

6. Season with salt and msg and the sauce is done.

7. Put fresh noodles in boiling water for 1-3 minutes and strain them.

8. Place noodles into bowls and add sauce.

10. The Zhajiang Mian is ready to be served.
